if our vote is secret, then how do they know, how many votes they captured from the different racial distribution.

They don’t actually know the exact distribution. Most of the time the analysis is by the area of voting.
For example if we know Area A has 100 voters and there are all Malay, when we count the votes for that area, then we shall know how many percent will go to which candidate.
That’s why there is always controversy when come to conclusion. MCA always say they have got back the Chinese vote while PR claims they still doing good.
